BREWRITUAL · MEET THE MAKER · MAKER NOTE NO.03
If you usually buy breakfast tea bags, English Breakfast is an easy way into loose leaf. Keep your usual mug and add milk if you like. The change is in how you make it: measure the leaves, give them a few minutes, then strain.
For a minty cup, there's Moroccan Mint. Just have a look at what's in it before you put it in the same category as your peppermint tea.
Both come from Brew Tea Co., started by Aideen and Phil in 2012. Rolled whole tea leaves are at the heart of their range. We stock these two blends in 113g boxes, and here's what to expect from each.
English Breakfast, with your usual splash of milk
Inside this box are black teas from Assam in India and Ceylon in Sri Lanka. The blend is malty and full-bodied, so we'd point you here if you like a familiar breakfast brew. It's good to drink black too; just give it a little less time in the pot.
Start with 5g of leaves and 400ml of freshly boiled water. Give it 3–4 minutes if you drink it black, or 4–5 minutes if you're adding milk. Then strain into your cup.
For a smaller cup, halve the recipe: 2.5g for 200ml, with the same brewing time.

Moroccan Mint has green tea in the mix
The ingredients are peppermint leaf and Chinese gunpowder green tea. You get the mint character from the peppermint, with body from the green tea. That also means it contains caffeine. If you were looking for a caffeine-free peppermint infusion for bedtime, this isn't that tea.
For this blend, Brew Tea Co. recommends 5g of leaves, 400ml of water at 100°C and at least five minutes to brew. Strain and drink without milk.
The maker suggests dark chocolate alongside it. If you have a bar in the cupboard, try a square with your first cup and see what you think.

Before you put the kettle on
You'll need a teapot and strainer, or a reusable infuser. Both teas are loose leaf, and both contain caffeine.
At 5g a time, a 113g box makes roughly 22 brews of 400ml each. We say brews rather than cups because mugs come in all sizes.
Use the timings above for your first pot. Once you've tried it, you'll have a better idea of how you like the next one.
